Paleo Chocolate Chip Cookies

One of my favorite sweet treats in all of New York happens to be right across the street from where I live. Hu Kitchen has the best paleo chocolate chunk cookies – if you live in the area and haven’t tried these, you need to! If I ever have a sweet tooth, these cookies are my go-to.
The other day, while visiting home for spring break, I was craving some of these delicious cookies, so I decided to attempt making them from scratch. I honestly don’t bake very much, so I decided to follow a recipe instead of trying to come up with something on my own (it would have been a disaster, trust me). Anyways, I ended up loving the recipe, and the cookies turned out pretty similar to the ones from Hu (I followed this recipe).
HERE’S WHAT YOU’LL NEED…
1 egg, slightly beaten
1 tsp vanilla extract
1/4 cup coconut oil, melted and cooled
1/2 cup coconut sugar
1 cup almond flour
1/4 cup coconut flour
1/2 teaspoon baking soda
3 oz 80% dark chocolate, coarsely chopped (I used about 1-2 oz though and it was plenty)
Course sea salt, for sprinkling
Preheat the oven to 350º F.
Start off by combining the eggs, coconut oil, coconut sugar and vanilla, and mix until smooth. Next, add both of the flours and the baking soda, and stir until a dough is formed. Lastly, fold in the chocolate chips, being careful not to overmix the better (mix until just combined). Scoop the dough onto a cookie tray, and bake for 11-13 minutes (I think I ended up baking mine for about 11 minutes). Sprinkle the cookies with sea salt as soon as you take them out of the oven, and then allow them to cool for a few minutes before eating.
And that’s it. Super simple, super delicious!
