Delicious Gingerbread

During the holiday season, one of my favorite things to do, is to bake. Not only is it a fun pastime, but it’s also so nice to sit down and indulge on a treat with friends and family. While I would be more than happy to make just about anything, one of my favorites is my homemade gingerbread. Growing up, this was always something that I enjoyed during the holidays. The combination of sweet and spice is perfect for this time of year, and is such a wonderful for any sweet lover. Oh, and did I mention that it’s both gluten free and dairy free too?
Here’s what you’ll need:
2 1/2 cups flower (I use cup for cup, which is a wonderful gluten free option)
1/2 cup granulated sugar
1/2 cup coconut oil
1 egg
1 cup molasses
1 1/2 teaspoon baking soda
1 teaspoon ground cinnamon
1 teaspoon ground ginger
1/2 teaspoon ground cloves
1/2 teaspoon salt
1 cup hot water
Start off by greasing your pan, and preheating your oven to 350º F. Next, in a large bowl, cream together your coconut oil and sugar until smooth, and then beat in the egg and then the molasses. In a separate bowl, sift together the flour, baking soda, salt, cinnamon, ginger, and cloves, and combine. Then, slowly add the dry ingredients into the creamed batter, adding about 1/3 of the mixture in at a time, and stir until well incorporated. Lastly, stir in the hot water, and pour the batter into your greased pan.
Depending on the size of your pan, the baking time will vary, so be sure to check on the bread occasionally (it should take anywhere from 40 mins to just over and hour).
Once the bread is ready, pull it out of the oven, and allow it to cool before you remove it from the pan. This gingerbread is best enjoyed at room temperature, with a cold glass of dairy free milk.
