A Sweet Treat

Today was a rainy day, and rather than letting the day slip away, I decided to head up to the kitchen and get cooking. For as long as I can remember, I’ve had a major sweet tooth, which especially kicks in when I’m lounging around with not much to do. As such, I decided to go for a treat that is extremely nutricious, but still manages to satisfy my sweet craving.
I came up with a chocolate pecan “truffle,” if you will, that is extemely decadant and delicious.
Here is what you’ll need:
1 cup pecans
2 pitted dates
t tbs cocoa powder
1/4 tsp vanilla
A pinch of salt (add to taste)
Start off by adding all of the ingredients into a food processor and pulse, making sure to scrape down the sides as you go. Continue to blend for a few minutes until all of the ingredients are incorporated, and the mixture can be molded without crumbling (this can take a few minutes). Once your dough is ready, take two teaspoons at a time, and form the mixture into balls.
At this point, you can either leave the truffles as is, or get a little more creative with it and add toppings. I chose to add cocoa powder on some, shredded coconut on others, and top the last few off with goji berries, but the options are endless!
Once you are done molding and decorating your truffles, pop them into the freezer and store for up to 2 weeks.
These “truffles” are the perfect snack for on the go. They are extremely delicious, nutriciously dense, and very filling.
